Salted Millionaire’s Chocolate Pots
New year, new me. This year we vow at Goupie to eat even more chocolate and create even more devilishly moreish recipes (all balanced with exercise and a healthy lifestyle ofc..)! We’re kicking the month off in style with our very own Millionaire’s Chocolate Pots! A base layer of Salted Sticky Toffee Goupie followed by a gooey layer of caramel and topped in dark chocolate – delish! This recipe is gluten-free and vegan friendly to boot, perfect for that Veganuary treat!
What You Need
100g Medjool Dates
200ml Coconut Milk (use a high percentage of coconut content for a creamier texture and take this 200ml off the top of a can if possible)
2tbsp Cashew Butter
100g Soft Brown Sugar
2tbsp Coconut Oil
200g Dark Chocolate (check the back to make sure it is completely dairy-free)
What You Do
Finely blitz the Goupie and press into the base of around 8 ramekin dishes (you can also use one large baking tin to make squares).
Blitz the dates with coconut milk, cashew butter, sugar and coconut oil until completely smooth.
Heat the date mixture over a medium heat until it changes colour to a light brown, and the texture is sticky.
Pour the caramel evenly over each ramekin dish and leave to cool. Refrigerate the puddings.
Melt the chocolate and distribute evenly across each pudding. Leave to set and ta-dah!
